Bicol Express Davao Style

Another pork recipe, but this time it’s not the kind you always see on your dining table. For some they make it as appetizers, others devour it as main dish.

Bicol Express originated in Bicol region, named after a train which travels from Manila to Bicol and vice versa. It was popularized only in Malate, Manila. It’s made of pork, coconut milk, onions, garlic, and lots and lots of chilis, or as we call siling mahaba.

Bicol Express in Davao

I took snap shots of this pork recipe for lunch when I caught my bro Leo cooking in the kitchen. I want to call it Bicol Express, Davao style. hehe. I haven’t tried making one, but it seems so easy to cook. Here are the procedure and ingredients after making inquiries from Leo:

Ingredients:

1/4 kilo pork belly
3 cloves of garlic
1 sliced onions
1/2 cup coconut milk
shrimp paste or popularly known as bagoong or alamang
a considerable amount of diced green or red chilis (siling mahaba)

Procedure

1. Heat pan or pot and saute garlic, onions, and the sliced pork on a small amount of cooking oil.
2. Pour down the 1/2 cup of coconut milk and shrimp paste.
3. Simmer for 20 to 30 minutes.
3. Stir thoroughly until you see the pork fat oil coming out.
4. Done.

So delectably sweet, spicy, and really really hot. Sarap! :-)
